The Dinner Dilemma
I am not the best cook. Neither is my husband. We can do okay in the kitchen and we know how to follow a recipe (I make fantastic chocolate chip cookies) but dinners have always been a struggle. Our biggest problem seems to be answering the question “What’s for dinner?”. As much as we love to eat, we can never come up with good ideas when the time comes. It doesn’t help that my appetite has been waning since I had the baby. It also doesn’t help that Mike and I have totally different tastes in food. He is your stereotypical “meat and potatoes” guy and I love fruit and vegetables and pasta. I guess it is true that opposites attract.
My sister suggested to me (she is a whiz in the kitchen, a culinary school graduate in fact) that we make a list of five meals we like and just keep eating those five things over and over. We can always throw in something different every once in awhile to mix it up. So here is the challenge: what five dinner meals would be easy to make, tasty, and include all of the necessary nutrition (protein, starch, and vegetable)? Keep in mind that I’m kind of picky in that I want to keep away from processed foods as much as possible. Fresh is best but when it comes to veggies I’ll accept frozen too. So, let’s here it. Any suggestions?

No suggestions here, just commiseration. We’re in the similar boat. Jason’s a picky eater and I’ll eat just about anything, but I’m not a big fan of cooking. I try to plan a menu every week, but it usually doesn’t work.

I wrote you out a list yesterday when we were driving to Chicago. (and then I read this) I will type it up and send it to you today. Not sure if it meets all your requirements, but it is something;)

One of our staples is spaghetti, I fill it full of chopped celery, peppers, onions and canned/fresh tomatoes. I always cook the ground beef a little small and can fire it into the food processor for my kidlet who won’t eat meat (tricky mommy move). And whole wheat or regular spaghettini noodles. They are thinner than regular spaghetti and feel lighter to eat. If i have time I’ll double a sauce batch and freeze it so on the nights I don’t want to do the work, I just thaw and cook noodles.
My husband too is a meat and potatoes guy, I’m more a salad gal. So we have salad with every meal. Due to a corn allergy on my part I make almost everything from scratch because it’s amazing what I can’t have and if you’d like it I have a stellar salad dressing.
